IF you are tired of plain old baked chicken, this one is going to be a treat. We’ve taken your basic baked chicken recipe and thrown in some basil, tomato and cheese. This is much easier than some of the other stuffed chicken recipes we’ve featured since you are not flattening and rolling the chicken but splitting it and placing the stuffing on the inside. I made this originally from the South Beach Diet Cookbook. I enjoyed the cookbook but found many of the dishes were a little outside my hubby’s comfort zone. This one thankfully was not.
