This is a Campbells soup recipe for chicken ~ which makes it super easy and delicious.
1 tbsp butter or margarine
4 boneless, skinless chicken breasts
1 can Campbell’s Brocolli and cheese soup (you can use the fat free if you want)
1/3 cup water
1/8 tsp pepper
2 cups fresh or frozen broccoli florets
What you do:
Heat butter in a skillet.
Add chicken and brown on both sides.
Add soup, water, pepper and broccoli. Heat to a boil.
Cover and cook over low heat 5 minutes or until done.
Serves 4.
Make it a meal:
I cooked brown rice with this to make it a complete meal. The sauce from the chicken was delicious over the rice.
What did we think?
I thought it was great. The little one loved it too, and even the husband ate it, broccoli and all (thanks to the cheesy sauce!). This one’s a keeper, nice and easy to make and inexpensive too.
If you wanted to save a little more money you could use 2 chicken breasts, cut them up into cubes and create more of a casserole and serve over rice or pasta.
