My husband is a red meat eater. If I serve chicken it has to be dark meat. I am trying to eat better, and so I hae been finding quick easy chicken recipes that will pass his incredibly finicky taste test.
This recipe passed the test with flying colors, even though it is made with chicken breast, he has asked for this recipe repeatedly! (which I think is a first for chicken breast).
This recipe is sweet and flavorful, with a little kick to it depending on how much spice you add. If you like it spicy you can add a little more, if you don’t like spice so much or have young kids you can add a little or leave it out all together. I only add a little red pepper as my husband hates hot, and I have toddler. It’s very flexible so fit it to suit your family.
Here we go with today’s quick easy chicken recipe. You can get this one done in a bout 20 minutes from prep to table. Anything less than 30 minutes I consider quick.
1/4 C Honey
2 tbsp frozen orange juice concentrate
1 tsp grated orange zest
1 clove garlic, minced (minced from a jar works great too)
1/2 tsp salt
1/8 tsp crushed red pepper flakes
4 boneless chicken breasts
1 tbsp margarine
1/2 tsp vegetable oil
Grab a small bowl and mix together the honey, juice concentrate, orange zest, garlic, salt and red pepper flakes.
Rinse off you chicken and then dry it off. Put a little salt on it to bring out the flavor. In a large pan ~ you can use stainless steel or no stick ~ melt your margarine and the oil over medium high heat. Then add your chicken breasts. Cook for about 4 minutes then flip it over and cook it again for about 4 minutes. IT should be Just cooked through.
Last step, pour your honey mixture over the chicken and cook. Turn the chicken a few times to coat the chicken all over. I let it cook for a little while so the honey takes on this delicious brown look and deep flavor.
To make this a meal just add some nice long grain rice and brocolli.
This meal went over big. Everyone in the family loved it. In fact, it’s one of the few chicken recipes that my husband asks for by name.
