If you are looking for a light lunch or dinner this is a great recipe. It’s perfect for those hot summer months when you don’t want to spend a lot of time in the kitchen. It is a tasty quick grilled chicken recipe that won’t be like all the others you make for your family.
serves 2 or 3
4 chicken breasts
2 Tbsp chopped walnuts or almonds
1 large head of Romaine lettuce
1 large tomato ~ chopped
1 red pepper ~ sliced
1/2 small avocado ~ cut in chunks
Dressing:
2 Tbsp Lemon juice
2 tsp balsamic vinegar
extra virgin olive oil ~ to taste
salt
pepper
1. Grill your chicken breasts ~ if you want them at room temperature for serving, do this ahead of time or buy already grilled chicken.
2. While chicken is cooking chop up the lettuce ~ make sure to get rid of the outside layers. Add your veggies to the salad.
3. Whisk your dressing ingredients ~ using enough olive oil to make it taste good to you.
4. Top with chicken and nuts of your choice.
This salad is the perfect meal all by itself. Especially if you are eating 5 or 6 small meals. This will last you for a few hours until it’s time to eat again. It has all the building blocks of a good meal, including protein and produce. If you need a few extra carbs you could add a some croutons or some nice bread.
I thought this would be a little bland, (I’m a ranch girl) but the dressing was quite nice and refreshing. I might also add a few more veggies to this salad. I also season the chicken a little before cooking, the basic salt, pepper and garlic powder. This is a very tasty salad, and a nice refreshing change of pace.
