Quick and Easy Grilled Chicken Pizza


If you’re looking for a fun, quick and fairly easy crowd pleaser then you’re going to love this! This recipe makes 4 pizzas, and from start to table takes 35 minutes. Your kids will love it, and gobble it right up.

What you’ll need:

1 tbsp olive oil

1 clove garlic finely chopped

2 boneless chicken breasts

1/2 tsp seasoned salt

4 flour tortillas (8 inch)

1 1/2 c finely shredded mozzarella cheese

2 plum tomatoes, thinly sliced

1/4 cup fresh basil leaves, sliced

What you do:

Heat your gas or charcoal grill. In a small bowl, mix up the garlic and oil. Brush the chicken with the oil mix and sprinkle with season salt, toss it on the grill and cook it for about 15 minutes or until the juices run clear. Make sure you turn it once to get good grill marks on both sides of the chicken.

Reduce your heat to medium-low

Put your tortillas on an ungreased cookie sheet. Brush the remaining oil mixture on the tortillas. Sprinkle a little cheese on each one, cut the chicken into thin strips and add to the top of your pizzas. Top with the thinly sliced tomatoes and sprinkle more cheese and the sliced basil over the top.

With a wide spatula, carefully slide the pizzas onto the grill, over medium-low heat. Cover the grill and cook 3 to 5 minutes. Make sure you rotate your pizzas to avoid hot spots. Cook until the cheese is melted and the crusts are crisp.

Slide your pizzas back on the cookie sheet, and serve.


Make sure you use cookie sheets with no rims… that way you can just slide the pizzas onto the grill. If you only have rimmed cookie sheets, just turn them upside down and use the bottom!

If you like these, get wild and try some of the many flavored tortillas available, there’s spinach, and pesto, herb, garlic. Just changing out the tortilla flavor can really spice this dish up!
