This chicken chili is another easy crockpot chicken recipe. It could be cooked in a pan on the stove, but I’m all about ease and simplicity. It works quite well in the crockpot and you don’t have to worry about it. I added a couple ingredients to make it a little more crockpot friendly, but I’m sure they will do fine on the stove as well. Of course, this recipe can be adjusted for your family’s heat level preferences. If you’d like it hotter just add a little cayene and/or red pepper flakes.

Easy enough ~ just throw it all in the crockpot, give it a stir and put the lid on.
Cook for 4 to 6 hours on low, or until it’s cooked through and a yummy delight.
This is a nice change from your basic beef chili, but the sides are pretty much the same. Good old fashioned corn bread! Yep, that’s what I’d add, maybe a little cheese and sour cream on top. My hubby’s crazy and he likes to have elbow noodles in his chili, so of course there was a side bowl of elbows for him.
My husband was a little leery of chicken chili, he’s more of a red meat kinda guy, but he actually liked it. The little one ate it up too. All in all this was a great quick easy crockpot chicken recipe.
