Chicken Cacciatore is a long time favorite in this house.  Tossing it in the crockpot for a set and forget meal makes it a favorite of the cook as well. This is great served over angel hair pasta.  Again this is a base recipe, although it’s good the way it’s written there’s plenty of room for you to change it to suit your family’s likes and dislikes. You can add extra veggies, like green peppers, or decrease the amount of sauce so it’s not runny. Whatever your family likes you can do with this recipe.

Crock Pot Chicken Cacciatore

serves 6

What you need:

  • 6 skinless, boneless chicken breast halves
  • 1 (28 ounce) jar spaghetti sauce
  • 2 green bell pepper, seeded and cubed
  • 8 ounces fresh mushrooms, sliced
  • 1 onion, finely diced
  • 2 tablespoons minced garlic

What you do:

Toss it all in the crockpot. Yes, even frozen chicken is fine and turn it on low for 5 to 7 hours.

If you would rather use bone in chicken that’s fine too. Also using frozen chicken will help keep your chicken from getting mushy. I always use frozen chicken in my crockpot recipes. (I usually forget to defrost in time)

Make it a meal:

This is a perfect meal for pasta. Angel hair is nice with it. I also make a side salad with a few simple veggies to go along with it.  As with any Italian dish a nice loaf of bread is good to sop up the sauce.

What did we think?

Great. This was a great recipe. Using the whole jar of sauce makes the sauce pretty runny, but that’s just the way I like it. We had some crunchy bread with it, so it was nice to have so much sauce to sop up at the end. The flavor was good. Just make sure you choose a sauce you really like to use on this recipe.
