When you think chicken parmesan, although it’s pretty basic and not too hard to make you think there’s a little time and effort involved, and then of course the time it takes to bake it in the oven. Get all that out of your mind now, here’s a great easy chicken recipe for microwave chicken parmesan, 15 minutes from prep to table.

Combine the sauce, italian seasoning and garlic powder in a microwave safe bowl. Cook for 2 to 3 minutes on 50% power. Make sure you cover it so it doesn’t splatter.
On a deep plate combine the breadcrumbs, parmesan cheese and parsley. Mix your eggs in a separate dish. Dip the chicken breasts in the egg and then coat with the breadcrumb mixture.
Place in a lightly greased microwave safe baking dish. If your microwave doesn’t turn, give the dish a half turn after 5 minutes or so.
Cook for 10 to 12 minutes.
Cover chicken with the tomato sauce and then top with the mozzarella cheese. Cook on 50% power for another couple minutes to heat through and melt the cheese.
A nice way to make this a meal is to serve this dish over some pasta, and add a side salad. If you are must a crunchy bread will make a nice addition to this dish.
The original dish used cornflakes I much prefer the italian breadcrumbs. This dish was good, but you know how it is with the microwave. It is good, but I think it would still be much better out of the oven. It was easy enough to make and everyone ate it, but didn’t get calls for seconds. I think we’ll probably stick with our regular chicken parm recipe.
