Easy Chicken Recipes ~ Chicken Spaghetti

This is a great easy chicken recipe for a quick dinner but it is also great for a pot luck. You might want to add or delete from the recipe depending on your family’s taste. You can always switch out to a different pasta to make it a little different, whether it’s angel hair or bowtie. It’s up to you.

Chicken Spaghetti

serves 5

What you need:

  • 1 (8 ounce) package spaghetti
  • 1 onion, chopped
  • 6 stalks celery, chopped
  • 1 large red bell pepper, chopped
  • 1/4 cup vegetable oil
  • 4 skinless, boneless chicken breast halves – cooked
  • 2 (10.75 ounce) cans condensed cream of mushroom soup
  • 1 (15 ounce) can chopped black olives
  • 1 (4 ounce) jar sliced pimento peppers, drained
  • 1 (4.5 ounce) can sliced mushrooms
  • 1/2 pound processed cheese

Cook up your pasta following the package instructions.

While your pasta is cooking grab a pan and saute your veggies ~ onion, celery, green pepper

In a large baking pan combine your veggie mixture, pasta and the rest of the ingredients. (except the cheese).

Bake in a 350 degree oven for 30 minutes. Pull out the spaghetti and top with cheese slices. Pop it back in for a couple minutes until the cheese melts.

Pull it out of the oven and let it cool for a couple minutes and then serve.

Make it a meal:

You can always add extra veggies to this dish. I would go ahead and throw them in the saute mix. I add zucchini, and I also add some garlic to the recipe, but in case you haven’t noticed I add garlic to most recipes. :) You can serve this with a nice side salad, and some crunchy bread adds a nice touch.

What did we think:

It was very good. I do think it needs some garlic. I would also probably leave out the celery next time. I’m just not a big fan of celery in cooked stuff, unless it’s soup. The family thought this was good and they enjoyed it.
