Mushroom and Swiss Chicken

This dish is delicious and will be great for a weeknight dinner or even for company.  It looks great on the plate, and you may want to choose simple sides since it is such a nice looking main dish.  If you are looking for an easy chicken recipe, that tastes good, but is a little fancier than plain old baked chicken this might be the perfect recipe for you.

Mushroom and Swiss Chicken

serves 4

4 skinless, boneless chicken breasts
2 cloves crushed garlic
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon balsamic vinegar
1 tablespoon Cajun-style seasoning
1 cup chopped green onion
1 (8 ounce) package sliced fresh mushrooms
4 slices Swiss cheese

What you do:

Grab a large zip top bag, if you have time to do this ahead of time it’s great to let it marinate for a bit, but if you don’t have time don’t worry about it.  Add the oil, vinegar, garlic and a little seasoned salt.  Throw in the chicken breast and smoosh it all up.  Let it marinate for a bit if you have time. If you don’t have time, just throw the chicken and the marinade in a baking dish.

Once in the baking dish season with salt, pepper and a little cajun seasoning (to your taste). Make sure you cover the dish.

Pop it in the oven preheated to 350 for 30 minutes.

After 30 minutes pull it out and add the mushrooms and green onions.  Spoon some of the juices back over the chicken, mushrooms and onions. IF there’s not enough in the bottom, add a little more oil and vinegar.  Then take off the cover and pop it back in for another 15 to 20 minutes.

Once the chicken is cooked through pull it out and top with a slice of swiss cheese. The cheese will melt and be delicious.  Serve right away.

Make it a meal:

Like I said earlier you may want to make some simple sides for this chicken dish. It is pretty exciting, so you may try a noodle sidedish, with some basic green beans.  Some nice crunchy bread would be nice with this as well.

What did we think?

It was a little plain the first time, so I added the balsamic vinegar which gave it a bit more pep. It was a very good chicken dish though. I love swiss cheese so it won my heart over right away. The hubby thought it was good, but he doesn’t like Swiss, so it was not in his top 10. The little monkey ate it like she eats everything else. ;)
