Ever been camping and cooked over an open fire? This easy chicken dish brings the camping home. This is a fun, easy chicken dish you can have the kids help with. It’s as simple as adding chicken and the veggies you love and popping them in the oven. If you are looking to get the whole family involved in meal prep and cooking dinner this is a fun meal to prepare.
serves 4
4 pieces (12 x 18-inches each) aluminium foil
4 chicken breasts fillets, pounded thin.
1 cup barbecue sauce
2 cups whole kernel corn
1/2 cup green pepper chopped
1 small onion, finely chopped
salt, pepper and sprinkle of garlic powder
This is where it gets fun! Grab a sheet of foil, and lay your chicken on top.
Make sure you are preheating the oven to 350. You can also do this on the BBQ grill ~ heat the grill to medium high.
Spoon some BBQ sauce over your chicken and then add some veggies.
Then pull the two sides together and fold over, and then fold in the sides making a cute little packet.
Have your family members do their packets or finish the other three packets. Then stick the packets in the oven. You want to cook them for 18 to 20 minutes. If you are doing it on the grill it will be more like 16 -18 minutes, but either way make sure you cook the chicken thoroughly, until the juices run clear.
This is a pretty well rounded meal, with the chicken and veggies in the packet. If you want a starch you can always add a noodle side dish from a packet or some rice. If you are making a side dish make sure you get it started in time for it to be done when your packets are done.
This is a fun meal. I let the little one help put it together which she enjoyed very much. I think the cooking time might be a little longer, or maybe it’s just because my chicken is never quite defrosted all the way. I generally add a couple minutes to chicken cooking time. The chicken stays moist and tender in the packet, and the veggies get a very nice bbq flavor.
