This is a simple chicken recipe and it is delicious. I try to base my meals on having a serving of protein and produce for each meal ~ I’m following the Fit Yummy Mummy plan, which is fantastic. This easy chicken dish works out great, because the “produce” is already there. I don’t have to worry about figuring out what to put with it.
This recipe feeds four.
2 C Rice
4 Chicken Breasts
1 tsp Salt
1 tsp black pepper
1 Tbsp oil
1 C fresh tomatoes ~ chopped or quartered
2 cloves minced garlic
2 tsp lemon zest
4 C washed/stemmed fresh Spinach
2 Tbsp fresh Basil ~ chopped
Juice from one lemon
1. Cook the rice following the directions on the package, leave it on the stove resting while you cook the rest.
2. Season your chicken with salt and pepper, and then heat up your oil and saute your chicken. Make sure your chicken is thoroughly cooked. When it is set it aside.
3. In the same pan you cooked your chicken, add tomatoes, garlic, lemon zest, herbs and lemon juice. You want to quickly saute these items just until the lemon juice has reduced. Then throw in the spinach. Cook the ingredients until the spinach has reduced.
This one’s already done for you! Just serve your chicken on a bit of rice and then cover with the vegetable mixture.
If you are going with just produce and protein or are on a low carb diet you can just skip the rice all together, it will still be just as delicious!
It’s a hit. This was delicious and so easy to make. My husband does not really like spinach or tomatoes, so he pushed the veggies off to one side, but did say the chicken was pretty good. The little one and I are all about the veggies so there was just more for us.
I love it when I can whip up an easy chicken recipe in less than 15 minutes!!
