I love chicken curry. I have made a number of recipes for chicken curry from the crockpot, to long drawn out recipes. This one is really easy, and very yummy. It is a very basic chicken curry recipe and you can add to it, and make it your own. You can also add the curry to your taste and liking. So take the basic outline and make it your own.
6 skinless, boneless chicken breast halves – cut into strips
1/4 cup olive oil
2 large onions, diced
1 C chicken broth
1 C diced carrots
1/3 cup curry powder, or to taste
1. Heat up a large skillet and add the diced onion and carrots. Cook until the onions are soft.
2. Add the curry powder and the chicken broth. Stir to combine the ingredients.
3. Add the chicken strips and cover. Cook until the chicken is cooked through.
4. Once the chicken is cooked through uncover and cook another 15 minutes to allow the sauce to reduce. Make sure you continue to stir frequently or the sauce may burn.
5. Serve and enjoy.
This dish can be added to and as with any good curry you can serve it over a delicious Jasmine or Basmati rice. Make sure you check the cook time on your rice so you can start it so it will be ready at the same time as your curry.
If you want more vegetables in your curry you can add diced sweet potatoes, peas, or mushrooms. IF you would like the sauce to be a little richer you can add a half cup of coconut milk. This will give it an even more authentic curry flavor.
Make this dish whatever you want it to be. It is an easy recipe to manipulate and make your own.
This was a very basic recipe when I found it. I think it would have been too bland and with no sauce, so I fixed it up a bit and it was delicious. My husband’s not a big fan of curry, but he ate it. I thought it was delicious. I did not add the coconut milk but I think I will next time. If you do, let me know how it turns out.
