BBQ Chicken Pizza

If you are tired of plain old baked boneless chicken you are in for a real treat. This is an easy boneless chicken recipe with a twist. We are taking a boneless, skinless chicken breast and turning it into a delicious BBQ chicken pizza! Your family will be happily surprised by this dish, and will be asking for it to go on the regular rotation!

BBQ Chicken Pizza

What you need:

serves 6

  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 skinless, boneless chicken breast half
  • 1/4 cup barbeque sauce, divided
  • 1/2 cup marinara sauce
  • 1 (16 ounce) package pre-baked pizza crust
  • 1 cup shredded mozzarella cheese
  • 1/3 cup thinly sliced red onion
  • 2 tablespoons chopped fresh cilantro

What you do:

Grab a pan and add the sesame and olive oils. Heat them up and throw in the chicken. As you are cooking the chicken add 1 tablespoon of the BBQ sauce. Turn the chicken and top with another tablespoon of BBQ sauce. Cook until juices run clear.

Let your chicken cool while your oven is preheating to 425. When chicken is cool enough to touch cut it into chunks.

Combine the rest of the BBQ sauce and the marinara sauce. Stir them together and then spread on the crust of the pizza. Add the cheese and then place the chicken chunks on the pizza. Top with the thinly sliced red onions.

Pop it in the oven and bake for 15 minutes or until the cheese is melted and bubbly. Take it out of the oven and allow to cool. While it is cooling add the chopped cilantro. Let it sit for a few minutes before you cut in to it.

Make it a meal:

This is a perfect pizza to make a nice side salad. You could also add some pineapple to this pizza and you would have a perfect meal. I don’t like to just eat one thing for meals so I usually pair it with a simple side salad, with lettuce, carrots and cucumbers ~ and any other veggies I have around the house.

What did we think:

I was a little nervous about pairing all these different flavors together, but it came out absolutely delicious. Hubby’s not too big on fancy pizza, but he loved it. The little one loves pizza and thought it was terrific. This is a recipe we will be making on a regular basis!
