4 skinless/boneless chicken breasts
1 package of ranch dressing mix
1/4 C dry breadcrumbs
2 Tbsp plain non fat yogurt
First preheat your oven to 375.
Spread a little yogurt over your chicken breasts.
Combine the ranch dressing mix and the bread crumbs in a zip top bag.
Add the chicken and shake to cover the chicken.
Place on an ungreased cookie sheet and pop it in the oven.
Bake for 25 to 30 minutes or until the chicken is cooked through and the juices run clear.
You can add so many things to this chicken dish to make it a meal. You can serve this with potatoes, in any form, mashed, baked, boiled, and maybe some carrots for color. I’m not sure I’d serve this with a salad, only because my hubby must eat Ranch dressing on his salad, and that might be too much ranch. lol
It was very good. The first time it was really too salty, the original recipe called for way more ranch mix. I cut it in half, and added the yogurt to keep the mix on the chicken. You could also use mayo if you don’t have yogurt on hand. This is a really good dish, it’s simple and easy to make. It wasn’t a huge hit, but I would make it again in a pinch.
