This is a very easy baked chicken recipe. The only thing hard about this recipe is waiting for it to get out of the oven so you can bite into it! This recipe calls for you to bake it, but you can easily use your counter top grill or the outside grill to make this dish as well.
serves 4
4 boneless skinless chicken breasts
1 tsp lemon pepper seasoning
pinch of garlic powder
1 tsp onion powder
4 pats of butter
1 large lemon
Preheat the oven to 350.
Grab a baking dish large enough to fit all your chicken. Lightly grease the bottom of the pan.
Place the chicken in the pan. Sprinkle a little of the three seasonings on top. Place a pat of butter on each breast, and then squeeze half the lemon over the chicken.
Cook for 15 minutes.
Pull the chicken out and flip it over. Season the other side, and then squeeze the other half of the lemon over the chicken.
Pop it back in and bake for another 15 minutes or until the chicken is cooked through and the juices run clear.
You can make this chicken dish a meal in any number of ways. You can add some chicken stuffing and gravy, or some steamed veggies and rice. My favorite is to steam some broccoli and serve with a little lemon juice over the top. Rice pilaf would also go well with this dish.
This was a good dish. I added the extra lemon juice and the butter. It seems to me that baked chicken just tastes better when baked with a little butter. They hubby thought this one was good, and of course the little one loved it. The chicken stayed juicy and did not dry out, which is always a plus in this house. I think I would definitely try this recipe on the Foreman. It would be a quicker meal too, since the Foreman cooks so much faster. If I did that I would just season both sides at the same time.
