Easy Baked Stuffed Tomato Basil Chicken

If you are tired of plain old baked chicken, this one is going to be a treat. We’ve taken your basic baked chicken recipe and thrown in some basil, tomato and cheese. This is much easier than some of the other stuffed chicken recipes we’ve featured since you are not flattening and rolling the chicken but splitting it and placing the stuffing on the inside. If you tried the other stuffed recipes and aren’t sure about another one, try this one, it will be great!

Stuffed Tomato Basil Chicken

serves 4

What you need:

  • 4 (6 ounce) boneless, skinless chicken breasts
  • 1/2 (12 ounce) bottle garlic and herb marinade
  • 16 fresh basil leaves
  • 1 large tomato, thinly sliced
  • 4 slices provolone cheese
  • 12 slices bacon
  • 1/4 cup freshly grated Parmesan

What you do:

Put your chicken breasts on a cutting board. Make sure you have a sharp knife. Now cut the breast horizontally through, making sure not to cut the halves apart. Open the breast like a book. Place the breasts and marinade in a zip top bag and let it marinate in the refrigerator for 30 minutes.

Lay your chicken breasts on a broiler pan open like books. Place the basil, tomato and cheese inside the book.  Once you have the stuffing layered in close the book and wrap the bacon around the outside of the chicken breast. If you need to you can secure with toothpicks.

Place chicken in the oven and cook on one side for 15 minutes. Flip the chicken over and cook the other side for another 15 minutes. Pull the breasts out of the oven and sprinkle with parmesan cheese.  Pop them back in the oven for a couple minutes to let the cheese melt.

Make it a meal:

This is a delicious main dish. You can easily add a pasta side dish and some veggies on the side. You could also just go with a side salad and a loaf of crunchy bread.  You don’t want anything to fancy on the side to distract from the yumminess of this main dish.

YUMMY! Everyone here loved this. The flavors worked together really well. It is also a really adaptable recipe. You can top it with mozzarella instead of bacon, add mushrooms to the stuffing, basically anything you want to do you can with this recipe. If you like basil you’re gonna love it.
