Chicken Salad Recipes ~ Chicken Salad Wrap

Haven’t spent much time on lunch yet, so I thought I’d give you a yummy chicken lunch recipe. This chicken salad recipe is actually turned into a chicken salad wrap! It is a simple chicken salad, but a couple yummy additions make it a little more special than your average chicken salad recipe.

Chicken Salad Wrap

serves 3

What you need:

1 10oz can white meat chicken in water ~ drained
1 Tbsp dried cranberries
2 celery stalks, chopped
1/2 apple chopped
1/4 c red onion, chopped
Salad greens
Whole wheat tortilla
salt and pepper to taste

Dressing:

1 1/4 Tbsp lemon juice
3/4 Tbsp olive oil
1/4 tsp Stevia (use sugar if you don’t have stevia)

What you do:

1. Combine your dressing items and whisk it up to combine well ~ then put it to the side.

2. Grab another bowl and add all the rest of your ingredients. (minus the salad greens) If it’s watery, just drain it off in the sink.

3. Pour dressing over the meat mixture and stir it up.

4. Add a couple dallops of chicken salad to your tortillas, add some salad greens, wrap and enjoy.

Make it a meal:

This recipe needs no additions, it is a perfect meal in and of itself. The only thing that would make this a better meal is a glass of water. :)

What did we think:

Delicious. What a great lunch. It was refreshing, light and it also filled me up. The little one enjoyed it as well, although she disassembled her wrap and ate everything separately. ;)
