Grilled Chicken with Strawberries Salad

This is a lovely fresh chicken salad recipe. I had some misgivings about the dressing, but I was pleasantly surprised. This is a great little salad to pack in your lunch for a picnic at the park. In fact, the first time I made this chicken salad recipe that’s exactly what we did! We packed it up, with the dressing separate, and took it to the park. After lunch we played and it was fun day.

Grilled Chicken and Strawberries Salad

serves 2

What you need:

2 C fresh spinach
2 chicken strips
chopped nuts ~ whatever kind you like
1/2 C diced strawberries
2 Tbsp diced red onions

Dressing

1/2 C orange juice
1/4 C frozen raspberries

What you do:

This part’s really simple.

Get your chicken on the grill (you can add some salt/pepper/garlic powder if you want) ~ I use a counter top grill but you can cook it in a skillet if you don’t have one.

While your chicken is grilling go ahead and dice your strawberries and onions. If you need to chop the nuts do that as well.

When the chicken is done, chop it up into small pieces. Set it aside to allow it to cool.

While chicken is cooling grab your blender and add the orange juice and frozen raspberries. Blend until smooth.

Put the salad together ~ add spinach and then top with remaining ingredients and dressing.

Make it a meal:

This is a perfect lunch meal by itself. It would also be a terrific dish to take to a potluck. If you are having a mango chicken or something link that you might add this sweet fruity salad to that meal.

What did we think?

We loved it! We took it to the park and had a delicious picnic. The little one even ate the spinach, but of course picked out the strawberries first. I was a little worried after tasting the dressing as it was made. It seemed pretty bland, but once it blended with the other flavors of the salad it was perfect. Light, fresh and quite tasty. I particularly liked the combination of the strawberries and the raspberries. The nuts were a great taste element as well, but can of course be left out if you don’t like them.
