These aren’t your average chicken quesadillas. These are ramped up with some BBQ sauce and other ingredients to make them a step above your basic plain quesadilla. There are a lot of recipes that need to be tweaked before they are awesome. This is not one of them. These BBQ quesadillas are delicious just as is in this recipe.

In a big skillet add 1 tablespoon oil and heat. Add onions and let them cook until they are translucent. Add the honey to the onions and let cook for a bit longer. You want them to be a nice golden brown. When they are a nice golden brown remove them from the pan and set aside.
Place the rest of the oil and your chicken in the pan and cook until chicken is no longer pink. Add the BBQ sauce and cover the chicken.
Grab a baking sheet and put four tortillas on it. Layer the tortillas with the chicken mixture, onions, and two types of cheese. Lay the remaining tortillas on top of the cheese.
Pop them in the oven for about 20 minutes giving the cheese time to melt and the tortillas time to get crisp. Don’t let them get too crispy though.
We generally serve this with some homemade quacamole, sour cream and chunky salsa. I also slice up some lettuce to go on the side. You could add some more veggies, but every once in a while you just have to go with what you’ve got!
YUM. These are ooey and gooey and delicious. I wasn’t sure how the hubby was going to react, but even he liked them. As usual the little one pulled hers apart, but her plate was clean by the end of the meal.
