Chicken Pot Pie Recipe

Who doesn’t love a delicious homemade chicken pot pie recipe? This one is super easy and will have your family begging for seconds. This recipe can be made even easier by using precooked chicken or even cutting up a rotisserie chicken from the grocery store. Yum! Feel free to add your own personal touch and make it your own.

Chicken Pot Pie Recipe

serves 8

What you need:

  • 1 recipe pastry for a (10 inch) double crust pie
  • 4 boneless chicken breast halves, cooked and diced
  • 1 (10.75 ounce) can cream of chicken soup
  • 1 (10. 75 ounce) can cream of potato soup
  • 2 (15 ounce) cans mixed vegetables, drained

What you do:

Preheat your oven to 375. Place one pie crust in the bottom of a 10 ince pie plate.

In a big bowl combine a ll the ingredients, and mix it all up good. Pour it in the pie crust.

Cover with second pie crust. Seal around the edges with a fork and then cut a couple vents in the top for the steam to escape.

Pop it in the oven and cook for 45 minutes, the crust will be a nice golden brown.

Make it a meal:

You got is all right here, a nice mix of chicken and veggies.  You can always change up the veggies in this dish to suit your preferences. In fact, you can even use frozen veggies, but I suggest you saute them a little before adding them to the mixture.

What did we think:

Perfect for a cold night. Warms you right up and really brings a family together. Perfect comfort food. Everyone ate it up and asked for seconds. Luckily there was plenty left. :)

I added one can of potato soup, but it’s really just personal preference. You can use 2 cans of cream of chicken if that’s what you prefer. It just adds another veggie element and a little extra flavor. You may also want to season with a little salt/pepper and I usually add a little garlic powder to everything. I might try next time sauteing a few onions and adding them to the  mix too.
