This is a yummy recipe that combines chicken curry and a nice easy casserole. If you are looking for an easy chicken recipe you can put together and serve your family, this wonderful chicken curry casserole might be just the thing.
serves 4 -6
2 cups chopped chicken, cutlets or parts
2 cups broccoli (fresh or frozen)
1 can of cream of chicken or mushroom soup, depending on what you like
1/2 cup mayonnaise
2 teaspoons lemon juice
1/4 tsp curry powder
2 tablespoons milk
salt
olive oil
Add olive oil to a pan and cook the chicken until almost cooked through, about 10-12 minutes.
Then combine the chicken and broccoli in a 13X9 casserole dish (or one around that size).
In a separate bowl combine the soup, mayo, curry powder, lemon juice, milk and salt. When combined pour over the chicken and broccoli mixture.
Pop it in the oven and bake for 30 to 40 minutes. Once it’s cooked it is ready to serve.
This is a great meal by itself, but I just can’t stand to only have one thing on the plate, so I would probably add a little side salad to this dish. You could always add a little noodle side dish if you want a little starchy side dish. I imagine a baked potato would go well with this dish as well, in fact you could even spoon the casserole over the baked potato!
This was a tasty dish, and very easy to make. I had never had a chicken curry casserole before, but thought it sounded good. It had a nice flavor, but the curry taste was not overwhelming. It is a nice way to introduce your family to the flavor of curry if they are not familiar with it. The casserole is a familiar dish, so it is not so intimidating to have new flavors to try. We will definitely have this again.
