Whole Herb Roasted Chicken

I was at a friends house one night when she made this. It was so elegant, but so simple! You can definitely make this for company, or just for the family on a weeknight.  This is  a very simple roasted chicken recipe, it may be a simple chicken dish, but it is beautiful and delicious.  Depending on the size of your family there may be leftovers. I usually use them for chicken salad the next day.

Herb Crusted Roast Chicken

What you need:

1 Whole chicken
1 bottle italian seasoning
1 lemon
2 Tbsp butter
salt and pepper

What you do:

Preheat your oven to 450 degrees.

Take the goodies out of the cavity of your chicken.

Rinse off your chicken and pat it dry.

Put some butter under the skin on both sides of the breast.

Poke some holes in your lemon with a fork and put it in the cavity.

Sprinkle your chicken liberally with salt. This will help flavor and keep in the juices.

Sprinkle your chicken liberally with Italian seasoning.

Pop it in the oven.

Cook for 30 minutes, then lower the heat to 350 and cook for another hour.

Take out of the oven, make sure the inside of your chicken is at least 180 degrees.

Let it sit for 10 minutes while you get everything else together. (it will let the juices settle back into the meat)

Make it a meal:

What you put with this completely depends on the kind of meal you want. If you are having a basic family dinner we usually have a noodle pack side dish, and some broccoli,  or green beans.  If you wanted to go a little fancier for company you could pair it with asparagus and roasted potatoes.

It’s a very basic chicken, so it easily goes with many things.  I love the crunchy skin ~ even though it’s really bad for you, it’s so delicious. :)

What did we think:

I think this is such an easy chicken recipe, but it makes it seem like you went to a lot of effort. I make this a lot. It is so simple and delicious. The husband can have the legs ~ so he gets his dark meat, and the little on and I love the breasts because they say so juicy and moist.  It is great for leftover chicken salad the next day.  We give this easy chicken recipe a big thumbs up!
